So I never know where my readers are on the timeline of life. As it’s Valentine’s Day today, I’m wondering if you are the type who is all about Valentine’s Day or if you are like me and pretty much over it. The deal was sealed for me as I opened my bed last night to find a seven dollar Valentines card tucked under the corner of my sheet. Points for effort on the part of my husband, and I love him dearly but a seven dollar card with words that someone else wrote just perpetuates my feelings about this holiday.
I contemplated a few last minute things I could buy or do for him yesterday and was reminded of our Saturday morning last week; where upon stopping at a convenience store we found cute little containers of edible cookie dough. I am lucky to get half the cookies to the oven when I bake at home so I know this is one of his favorite indulgences!
So I decided to whip up a batch of eggless cookie dough to leave in the refrigerator and surprise him at lunch. I should have added that I essentially had about 10 minutes to make this happen yesterday morning …below is the super easy recipe I used:
Edible EggFree Chocolate Chip Cookie Dough
1 box of Betty Crocker white cake mix
1/3 cup vegetable oil
1/3 cup water
1/2 pkg Ghiradeli milk chocolate chips
Stir the wet ingredients into the cake mix until smooth then add your chips last and refrigerate. Super quick & easy- Enjoy by the spoonful!
