The other day I had some of the most delicious pancake! Not only did they taste amazing they were also much healthier than normal pancakes.
Lemon Ricotta Pancake ingredients
- 1 cup of finely blended rolled oats
- 2 T of lemon juice
- 1/3 cup egg white
- 1/2 tsp baking powder
- 1 container of vanilla Greek yogurt
- 1/2 cup of ricotta cheese
- 1 tsp stevia
- 1/4 cup of coconut milk
Blend oats, baking and stevia and pour into a mixing bowl. Using the blender again combine ricotta cheese, egg white, yogurt and lemon juice until smooth. Mix dry and liquid ingredients in the mixing bowl. Then add coconut until consistency of choice.
