So today I feel was fairly productive. I went to church this morning and came hope and took a nap, but after that I decided to get some work done! I did a little workout, 2 loads of laundry, helped take care of little sister who is sick with a fever, and of course lunch prep for the week!
Up until last year I ate school lunch almost everyday, but beginning of sophomore year I stopped. I still ate it on occasion but I just found that packing chips, fruit snacks, and Little Debbie cakes tasted better! Now I didn’t always have this, I still took sandwiches and fruit when I had the time, but when I didn’t plan ahead I just grabbed whatever was easy and delicious. Once I started to bring lunches consistently I thought, “why not try to eat healthy when this is one meal that I can control.” So, that’s what I did. I made sandwiches with whole grain bread and brought fruit. I still brought sweets but had a couple of mini candy bars instead of my usually full sized one. I now have really cut back on my packaged sugar intake and usually just substitute my candy and chocolate craving with fruit!
Today (Sunday) is the day of the week that I decided I should start doing this for the school. I made 3 different rice dishes and 2 sandwiches on whole grain wheat thins. One of my rice dishes had potatoes and broccoli, one had broccoli and cheese, and my last one had creamy rice and green beans. I also cut up peaches and watermelon! I am so fortunate that my school has a microwave in our cafeteria that I am able to bring a meal to warm up! So these are my lunches for the week, hope the rest of your week is great!
